marinades are so yummy, yet i don't do it that often. and i have no good excuse either.
i am back on the meal planning bandwagon, and that is working out quite well, actually. but unless i am using the slow cooker, i tend not to even think about dinner until late afternoon - i know i have all the ingredients on hand and any recipe at the ready, so i can just go about my day. but tossing everything into a bag in the morning and letting is mingle for a few hours takes little effort and adds so much flavor. (not that things don't taste fabulous otherwise, i'm just saying let's mix it up a bit.) so this summer, i vow to embrace marinades. join me!
first up - MOJO PORK (from Martha Stewart/Everyday Food : recipe here)
the marinade was delicious, i love that combination of citrus + heat. since i am not a fan of grilled cucumbers (and the kiddos ate the remaining orange, ahem), i opted to build our mini skewers with a ratio of 2 zucchini chunks per pork cube. the mister brought home twice as much pork as was needed and i should have doubled the juices + red pepper to compensate and intensify the flavors. next time. since there was more than enough, i saved half the marinated pork in a new bag and tossed it in the freezer for another day. (maybe when we have a new grill...) the kids loved it and we grownups added sambal oelek for added kick. survey says yum. mojo yum.
