solution : summer reprise salad (delicious warm or cold)
+ 1 box of quick-cooking barley from the pantry
+ chop an assortment of fresh veggies/herbs while the barley cooks
+ dice one hunk of ricotta salata
+ drizzle with olive oil
+ squeeze on the juice of a lemon or two
+ add cracked black pepper and kosher salt to taste
+ toss and serve
