i've made the same thing for dinner two wednesdays in a row now. why?
- it's fast.
- it works the pantry.
- it's easily customized.
- it includes all the food groups. (except for the chocolate group. which is why i made pudding, too. sugar-free instant chocolate pudding. yes i did.)
- AND it's made in one pot.
oh, and it's superdelicious.
lemon linguine with asparagus + goat cheese
cook the linguine 5 minutes, then add the asparagus to the pot. drain when the pasta is al dente. return it all to the pot with some of the pasta water. add some good olive oil and a tablespoon or two of butter and stir. add salt, pepper and fresh garlic to taste.
[at this point i portion out one serving for girly #1 who says lemon is "too lemony".]
add the juice of 2 lemons along with some halved grape tomatoes to the pot and stir.
[at this point i portion out one serving for girly #2 who eats lemons and tomatoes like they are going out of style.]
add hot pepper flakes and stir.
[now i portion out some for the adults along with a few shrimp i found in the freezer and threw in the pasta water for the last few minutes.]
everybody gets a goodly amount of goat cheese crumbled on top and the meal is devoured. xoxo
p.s. this is as far as i go in terms of being a short order cook. no chicken nuggets are served in this establishment. panko chicken with sushi rice and salad a la charlie trotter, well that's another story. in fact, i think i'll be making that tomorrow. yum!
